She is a third-generation Mexican Chef with classical training as a pastry chef working her way through Spain, France, Italy and Belgium at some of the world’s top restaurants. You may also recognize Chef Elia Herrera as she was a contestant on Top Chef Canada and Top Chef Mexico. Milpa is built to be a culinary destination in Calgary. Chef, Elia Herrera is also owner and operator of Colibri and Tecolote restaurants in downtown Toronto and her line of hot sauces, Tecolote are coming soon to Calgary.
